Not being a massive fan of the taste of tumeric but loving the anti inflammatory health benefits, it took me a few recipes to find one I like. Here's the winner, it really is YUM!
1 cup almond or coconut milk, 1/2 cup mango, 1 frozen or fresh banana, 1 tblsn coconut oil, 1/2 teaspoon tumeric and same for cinnamon and ginger. Blend with a Dash of sea salt. Happy days!

wild rice salad (serves 4)
2 cups of wild rice cooked 1 small red onion diced finely 1/3 cup roasted diced almonds 1/3 cup cranberries 2 diced oranges 1.5 cups of chopped herbs (i used mint, basil, parsley) 3 tablespoons orange juice 3 tablespoons olive oil 1 tablespoon balsamic vinegar lentil & kale salad 1 tin brown lentils drained and rinsed 3 cups of washed chopped fresh kale 2 cups of roasted pumpkin diced 1 large beetroot (roast & dice or grated raw) 3 tablespoons olive oil 1 lemon juiced 1 tablespoon mustard This is as delicious and easy as it looks!
Saute onion in olive or coconut oil Add pumpkin, carrot, red capsicum, and eggplant diced (approx 3 cups of diced veg) Add 2 tablespoons of thai red curry paste - stir to cover vegetables. Add 1 tin of coconut milk. Add 1 small bunch of chopped coriander Squeeze 1/2 a lime Serve with extra fresh coriander, chopped fresh mango, diced avocado and lime. |
