RECIPE
2 hot chillies – seeded removed, sliced 10 shallots peeled and sliced 6 garlic cloves sliced 50gm galangal – peeled and sliced 50gm turmeric – peeled and sliced 2 tbsp coriander seed 6 macadamia nuts roughly chopped 50gm ginger peeled and sliced 1 tbsp palm sugar or coconut sugar 100ml coconut oil 2 sticks lemongrass 2 bay leaves 1 kafir lime leaf METHOD Combine all ingredients, except lemongrass, bay and kafir leaves. Blend until the mix resembles a paste – add small amounts of water until this happens. Heat oil in fry pan and fry all ingredients over medium heat until water is evaporated and you have a nice golden colour.
