Ingredients 2 cups of cooked rice 1 tablespoon of chilli paste 3 tablespoons of extra virgin olive oil
Salad 2 medium size Lebanese cucumbers diced 1 cups of chopped fresh herbs eg. basil, coriander, parsley 2 spring onions chopped (green part is best in this recipe) 1 cup of raw broccoli, cut into small florets 1 avocado, diced ½ cup of chopped roasted almonds (or other nuts)
Dressing ¼ cup soy sauce ¼ cup rice vinegar 2 tablespoons of sesame oil ( or EV olive oil works fine) 1 tablespoon of maple syrup 1 lime juiced 1 small clove of garlic minced.
Method 1/Cook rice and allow to cool. 2/Then mix in chilli paste and oil. Spread onto lined oven tray and bake for 40 minutes at 200 deg C. 3/Mix roasted crispy rice and salad ingredients in a bowl. 4/Pour in dressing and mix well.
