Ginger & Walnut Cookies Gluten Free

Ginger & Walnut Cookies (GF)

Gluten-free Ginger & Walnut Cookies, with a crispy exterior and a chewy center, studded with pieces of walnut and infused with warm ginger spice, arranged on a plate.
Ingredients
  • 1½ cups walnuts ground in a food processor 
  • ¼ cup coconut flour 
  • 1¾ tsp baking soda
  • 3 tsp ground ginger
  • 1 tblspn finely chopped fresh ginger
  • 2 tsp ground cinnamon
  • ¼ cup coconut oil, melted (or butter)
  • 1 cup coconut sugar (if using castor sugar use less)
  • 1 egg 

Instructions
  1. Preheat the oven to 350 degrees Fahrenheit. 
  2. In  a food processor, blend the walnuts until they are the consistency of flour.  Mix the walnut flour with the coconut flour, baking soda, ginger, cinnamon. Set aside.
  3. In a large bowl, combine the coconut oil, coconut sugar, and until thoroughly combined.
  4. Slowly mix the dry ingredients with the wet mixture. Mix completely.
  5. Refrigerate the dough for about 10 minutes.
  6. Place tablespoon sized balls of dough on the prepared baking sheet. Flatten with the back of a spoon.
  7. Bake at 350 for about 15-18 minutes, or until the edges begin to dry and crack.
