Ingredients 1 Cup of rice (I used Jasmine Rice, but Basmati would work well too) 1 Can of Butter Beans (or your choice of beans eg. borlotti, kidney) 1 tblspn minced garlic 1/2 cup of olives, chopped, pipped 1 cup of cherry tomatoes, halved 1/2 cup of sun dried tomatoes 2 cups of leafy greens eg. baby spinach 1/2 cup of artichoke hearts (from jar) 1/2 cup coconut milk 2.5 cups of water 1/2 lemon squeezed/juice 1 small bunch of parsley chopped (garnish) 1/2 cup of fetta (garnish)
Method Mix all ingredients in a baking tray and bake for 40 minutes at 200 deg. C. Garnish with parsley and fetta.
