Seedy Goji Protein Balls

Seedy Goji Protein Balls

Recipe

185g Dried fruit of your choice (dates & apricots work well)
1 cup Goji Berries
1 cup Shredded coconut
1 cup Mixed Seeds (eg. sesame, pumpkin, sunflower)
1 cup Roasted Almonds roughly chopped
1/4 cup Peanut Butter or Tahini

200g Dark Chocolate

Method

Place all ingredients except for the Dark Chocolate in a blend until a sticky mix is formed, if it is too dry to roll into a ball add a little water.
Roll into tablespoon sized balls and place in the freezer for approximately 30 minutes. 
Melt Dark Chocolate and dip balls to coat or drizzle them with chocolate if you prefer.
