Stuffed Mushroom Bites

​Stuffed Mushroom Bites
 
Ingredients
 
1 cup of breadcrumbs (fresh toasted bread tastes best)
½ cup of chopped fresh herbs eg. rosemary, thyme, parsley
8 button mushrooms (approx. size of a golf ball)
Stems of the mushrooms diced and used in stuffing
¼ cup of grated parmesan cheese
3 tablespoons of extra virgin olive oil
 
Method
 
1/ Wash mushrooms gently and pat dry, no need to peel.  Remove Stems.
2/ Chop mushroom stems and add in a bowl with other ingredients. Stir
3/ Fill each mushroom cup with stuffing and place on lined baking tray.
4/ Bake for 15-20 minutes or until golden brown.
