Ingredients 2 tbsp milled flaxseeds 6 tbsp unsweetened almond milk 120g almond paste/butter 80g dark brown sugar 80g apple puree 1/2 tsp vanilla extract 100g white flour 80g ground almonds 1 tsp baking powder 1/2 tsp bicarbonate of soda 4 tsp ground ginger pinch of salt 3 poached Bosc pears *see note Method Preheat oven to 180 degrees C. Grease and line a 20cm cake tin. Combine all ingredients (except pears) to make a batter. Pour into prepared tin. Place halved and cored pears on top of batter and sprinkle a little extra brown sugar on top (about 1 tablespoon). Bake for 40 minutes turning the cake tin after 20 minutes. * I have not included a recipe for poaching pears here but it is super easy - just simmer peeled pears 1/2 covered in water with 1/2 cup sugar and whatever spices you like. I used star anise, cinnamon stick, cloves. Simmer until just tender, don't over cook.
