This is as delicious and easy as it looks!
Saute onion in olive or coconut oil
Add pumpkin, carrot, red capsicum, and eggplant diced (approx 3 cups of diced veg)
Add 2 tablespoons of thai red curry paste - stir to cover vegetables.
Add 1 tin of coconut milk.
Add 1 small bunch of chopped coriander
Squeeze 1/2 a lime
Serve with extra fresh coriander, chopped fresh mango, diced avocado and lime.
